Bishan Wate Washing Station is located in Guji, near the Wate River, where around 50 smallholder farmers contribute ripe coffee cherries for processing.
For this Special Prep lot, cherries are carefully selected from a limited number of farmers, with an emphasis on perfectly ripe fruit. After sorting, the cherries are washed, depulped, and fermented for 48 hours before being dried on raised beds for approximately 21 days.
Guji is a high-altitude, forested coffee-growing region in southern Ethiopia, known for its rich red soils and small coffee gardens. Coffees from the region are often distinguished by vibrant fruit character, deep sweetness, and delicate floral notes.
This lot is made up of native Ethiopian heirloom varieties, reflecting the genetic diversity and distinctive character that Ethiopia is known for.
